These loaded Croissant breakfast boats are so easy to make, you can add your favorite toppings and you can make ahead perfect for grab and go breakfast.

6croissants(I bought mine from Costco)
6eggs
3tablespoonmilk
1cupcheddar cheese
8slicesbacon(cooked and chopped to bits)
½cupmushrooms(sliced and cooked)
½cupscallions(or chive)
1teaspoonsalt
1teaspoonground black pepper

Instructions:
Preheat oven at 375°F
Prep your Ingredients:
Cook the bacon until crisp. Place on a plate lined with a paper towel to drain excess oil.
Cook the mushroom with the leftover bacon grease. Drain and set aside.
Prep the bread:
Cut down the middle of each croissant using a scissor or a knife. Set aside.
Line the baking sheet with parchment paper or spray some oil.
Prep the Egg Mixture:
In a separate bowl, whisk egg and milk together. Add the cheese, bacon, and scallions. Season to taste with salt and pepper.
Spoon the egg mixture into each boat trying to disperse evenly the mushroom, bacon, and scallions.
Loosely cover the top with aluminum foil to avoid the bread easily get browned and crusty.
Bake at 375°F for 20 to 25 minutes or until the bread turned golden brown and the fillings are puffy and set in the center.
Cool the bread down a bit and serve warm.
Notes:
1.) You can customize your fillings according to your preference. Add more eggs or meat etc.2.) Make sure to loosely cover the baking sheet with aluminum foil while baking to prevent the bread from getting dark and crunchy.
